| Method

| 1. |
Combine
yeast and 20% of water in small bowl |

in
a large mixing bowl, combine egg, oil, molasses, seeds and remaining
water. Mix well. |

Add
143 gm (~1cup) bread flour to mixture and beat well for 3 minutes. |
| 4. |
Stir
in softened yeast. |
| 5. |
Gradually
add bread flour, beating until dough may be easily handled. |
| 6. |
Knead
~ 12 minutes, until dough is smooth and elastic. |
| 7. |
Place
dough in lightly greased bowl, turning once to coat. |
| 8. |
Let
rise in warm place (~1.5hr.) until doubled. |
| 9. |
Punch
down dough and knead briefly. |
| 10. |
Scale
dough into 2 even portions. |
| 11. |
Shape
into loaves, place in bread pans and let rise (~1.5 hr.). |
| 12. |
Bake
at 375° F. for ~35 minutes. |
| 13. |
Let
cool in pan for 5 minutes, then remove to rack. *Brush loaf
tops with butter to increase crust softness. |
